Confirming, I think this is exactly what I've just reported upstream to
GNOME and provided a suggested patch for.

Jonathan, can you confirm that this happens only if the application was
already started before you try to switch the input device, or does it
not switch to the headset when bluetooth is connected, even if you start
the application afterwards?

It makes some sense to verify this, because here applications already
started don't always switch, but newly-started applications do use the
new default input device I selected.
