The bug is solved in Evince 40.2, and it looks like Ubuntu 21.10 has
Evince 40.4-2, which would include the fix.
However, this is worth backporting, please: it's really a weird nuisance
for one of the core applications on a desktop computer.

After updating to Ubuntu 21.04, evince does not show any info in the
title bar. Previously, it showed the filename and the PDF title.
