[~tallison] I've tested and it works, I've created a WIP page in confluence on 
how I got it to install as a Windows service.

Unfortunately they are Linux only.   However I have used NSSM https://nssm.cc/ 
on Windows for running Java processes

   Add a stop method that will shutdown the watchdog process and terminate the 
JVM. This is useful for Apache Commons Daemon, allowing a user to define the 
StopClass and StopMethod. Under windows, this will allow a user to run 
tika-server as a windows service with correct start/stop behavior.

I know this is old, but I ran into this same issue last year on a project. I 
built from source and made the modifications. That was about a year ago, but I 
still have the code around somewhere. I'll dig it up and submit a PR.
