The difference for Oracle is that it doesn't use ODBC at all, but "speaks" directly to the OCI (Oracle call interface) thus saving a few communication layers.
The hope is that future releases will communicate through ADO for SQLServer which is also much closer to the "kernel" than ODBC

I can only speak for MSSQL:

If you don't establish a system dns, Axapta will do for you, so it just does
some work for you, but it's the same if you use the datasource-field in your
axconfig or not. There's no performance advantage.

For oracle, there are big differences, but I don't know them for sure.
