I recently discovered a new Java app called PS3 Media Server. This software is fantastic I can throw anything at this software in any format and it'll recognize it and stream it to my PS3 including FLAC music files and even DVD ISO's. It runs perfectly on my media server with no problems, was easy to setup and it is FREE.
It is so good that I am considering just getting a Sony PSP to use as a controller without needing to have the TV on all the time and would replace my long term plan on having a Squeeze Box Duet or Touch (once released).
