Thanks everyone for your input, and Charlie for the resource - actually I had 
looked there before I started this thread.

It looks like we may be going in the direction of a shopping cart service, 
probably Volusion (http://www.volusion.com) for these reasons:
* time constraints - can get it up quicker, and still have the option for a 
native shopping cart later.
* client's POS can do an inventory export to Volusion
* security issues - not sure I want the liability for credit card data on my 
server.

If anyone has any experience with Volusion or other shopping cart services that 
they would like to share, I'm all ears.

Check out VIVIOTECH at http://www.viviotech.net/
They do an assortment of CF type web servers including VPS or Dedicated  on 
Windows or Linux.
Also your Railo and Open Blue Dragon CF knock-offs.
They dont lock down or disable certain CF functions like some hosts do.
Multiple DB options.

Ive been using them fro a couple of years and have been very satisfied.  I have 
a CF9 VPS on Linux.  Also I work on some other sites on their servers that are 
CF9/Windows/MS-SQL with RDC access.
Tech support is very helpful and actually personal.  
Never had any performance problems.
Prices are among the most reasonable.

I started using them after I saw some good comments on Ben Nadel's blog.

ColdFusion Builder is basically Eclipse plus an Adobe add-on for CF that has 
been packaged as Adobe software.

Prior to CFBuilder, most professional CF developers use  Eclipse + CFEclipse 
plugin.
If you want to try it, consider Eclipse/PHP (comes with plug-ins for web 
development) and then add CFEclipse (http://cfeclipse.org/) to it.
Best tip I can give you though, is to start out with just the modules you need 
instead of loading up on everything from the start Eclipse-PHP + CFEclipse will 
get you started.  
You may need an SVN client.. if so check out SubClipse (Eclipse plug-in) at 
http://subclipse.tigris.org/.

Comparing CFBuilder and Eclipse/CFEclipse:
You can Google for reviews and comparisons between CFEclipse and CFBuilder, 
there is a fair amount of opinions in different blogs, etc.
- CFBuilder has some tools in it that integrate with other Adobe products.
- Either product can be enhanced by adding different Eclipse plug-ins.
- both are very good products.

Dreamweaver is OK if you are doing small HTML web sites or page design work, 
but it lacks the tools for serious CF development.

My opinion... Go with either CFBuilder or Eclipse+CFEclipse.
- DW is not the best tool to use for CF development.
- CFBuilder is a commercial license ($$)
- Eclipse is free.
