The from address really should be valid. Otherwise spammers will have a 
lot of fun with your mail server. The reply-to can be somewhere else. I 
suspect that is what you really need.

Not necessarily. If the server requires authentication, then the  
server could use any from address without issues.

I was able to do it with Exchange 2000 until my company upgraded to Exchange
2007.

The from attribute is as stated in CF7 LiveDocs:  This attribute does not
have to be a valid Internet address; it can be any text string.
