I am not experiencing any problems opening LO documents, both Writer and Calc open fine. I am using LO version 7.1.1.2 on two Linux OS laptops. One laptop is an older Acer netbook, the other is a System76 laptop. Maybe the problem is with LO interacting with your macOS and/or Big Sur? I have given the chapters Preface and Getting started of LibreOffice Writer 7.1 a first review. As it were copies of the already updated chapters of 7.0, I found very minor errors in the Preface and no errors in Getting started.
