you would want to backup your dovecot/postfix config files and mail 
certificates as well, and your database if you are using one for 
authentication, and user list, just in case.

I have never imagined that tar requires a -p to preserve permissions.

Depending on your setup, abilities and intended results, you might also wish 
consider offlineimap and imapsync, with which you could maintain an updated 
offsite copy going forwards.

Thanks for the suggestion. The host is just moving our VPS to new hardware
so no update of our software is being done. (Though I need to do that
myself when my schedule allows.)

I would say it should be ok as long as its going to be the same setup, 
but if you are expecting to upgrade dovecot or any other related 
package, I would then recommend to perform upgrades before migrating and 
taking the backup, so to guarantee everything is going to be working.
