if these are literally the lines in your config:
mail.from.address = $ {mail.admin}
feedback.recipient = $ {mail.admin}
you must remove the whitespace befor the dollar:
mail.from.address = ${mail.admin}
feedback.recipient = ${mail.admin}
In your [dspace-install]/log/dspace.log there will be an error like
Illegal whitespace in address in string ``$ {mail.admin}''
If you got another error please post it to the list.
