I played around a bit, and I noticed some additional things:

I can't open Ekiga's address book more than once, when I click the
menuitem a second time (after having closed the address book) nothing
happens. The console says:

(ekiga:11882): Gtk-CRITICAL **: gtk_widget_show_all: assertion
`GTK_IS_WIDGET (widget)' failed

After I restart Ekiga it works again, but again, only once.
Let me know if you need some additional debug output.

I tried to edit the number of a contact in Ekiga's address book. Ekiga
remembers the new number, but Evolution still has the old value. Where
does Ekiga store the number? I couldn't find anything in gconf either.

That's unrelated and already fixed for 3.0.1

I am experiencing the same problem here.

 Those numbers are stored in Evolution's addressbook. If they
 disappeared, there are three possibilities :
 1) you were running the non-Gnome version and now you are running the
 Gnome version of Ekiga

I was running snapshot versions (months ago; on Ubuntu 7.10 and 8.04)
before I installed Ekiga 3.0 (again, a snapshot, but it should basically
be the 3.0 code), to which I upgraded from the standard Ubuntu packages.

Is it possible that some of the snapshots in between have been compiled
without Gnome support? What does Gnome support mean, is it the support
for Gnome sessions and the Evolution address book, or is there anything
else?

It is support for the Evolution Address book.
We are using the same fields, provided by evolution.
Are your contacts available in Evolution ?

Exactly. I see the names of the contacts, but everything else is empty.
I never edited them in Evolution, I always created and managed them via
Ekiga's address book.

The field holding the numbers is called Video Conf in the contacts
overview and Video Chat in the detailed view (inside Evolution).

  No. I get a menu with four items: Edit, Remove, Refresh and New
Contact. When selecting Edit I get another window containing boxes for
Name, VoIP URI, Home phone, Office phone, Cell phone and Pager - but,
with the exception of Name, the boxes are empty. The numbers I had
under Ekiga 2.0.12 are gone :-(

Those numbers are stored in Evolution's addressbook. If they
disappeared, there are three possibilities :
1) you were running the non-Gnome version and now you are running the
Gnome version of Ekiga
2) the opposite
3) a bug in evolution-data-server

But Ekiga still works the same regarding the phone numbers. They are
even stored in an external entity. So there is no risk of loosing them.

The only different thing is that they are not displayed by default, you
have to right-click...
