Which vintage of the Mac mini?
The current version has both a Line Input jack and Headphones/Line Output jack.
Both mini-phone jacks can do either analog or S/PDIF, but K3 will only take
analog, of course; just use a cable with 3.5 mm plugs for all connections.
Even though the K3 line input is labelled Mono, it is a stereo jack; in
cocoaModem, select the left stereo channel for output device.
Use Audio MIDI Setup in /Applications/Utilities to find details of all audio
ports that are connected to your Mac.
Having said that, you are much better off getting a cheap USB sound card such
as the Griffin Technology iMic for exclusive use by the modem. That way, you
won't have to worry about music, chimes, and application sounds from going out
over the air when you use VOX to engage transmit.
