Hi :)
How about using Bcc when writing to a lot of people at the same time.  As you 
have found there is a privacy issue when using CC or To but Bcc neatly hides 
everyone from everyone else although they can all reply to you.  It's the same 
as CC except it's "Blind CC".  There always has to be something in the "To" 
field so a lot of people just put their own email address in there.

Just about, only that a contact list saves you from having to manually
add the recipient addresses to each outgoing mail.

Is that equivalent to using BCC?

Create a new contact list for the recipients (New -> Contact List), and
check mark the "Hide addresses when sending mail to this list" option in
the Contact List Editor window.

Send emails to the contact list and the recipients will see only a
generic "Undisclosed-Recipient" label in place of names and addresses.

I don't know of such an option (in Evo or in other mail clients for that
matter), but possibly you could work around it by using aliases, i.e.
multiple entries for the same person. Bit of a bear to maintain though.

Alternatively, you could write an output filter, but that isn't
something I've ever done.

the names of the emails' recipients, as to not disclose the name I've
chosen to give them on my computer (which is usually their full name,
if I know it).

I've noticed recently that I am exposing my contacts full name
everytime I send an email to them and someone else.

I would like to know if there is an option in Evolution to avoid that
(so, I'd like just to send to the email address and not appending the
name).
