Hi,
it looks like there is some issue with the gpg-agent, which is
responsible to ask for the password for your keys. The gpg-agent can be
disabled in config for the gpg1, but your evolution-data-server
 version uses gpg2, with which I do not know where the setting is
stored. The gpg1 has it in
~/.gnupg/gpg.conf , use-agent key. Try to install pinentry package,
eventually any of the sub-packages. I have install pinentry and
pinentry-qt (which are required by seahorse), both 0.9.6-4 versions.

I never did those configurations before. But I'll look into it. I
wonder if this is a Fedora thing? Cause I have no problems in Mint and
Trisquel. But thanks a lot! No I know where to look.

How could that happen? I mean, my Evo does not download/upload/ship or
whatever anything, if I do not ask to do so. Are there other tasks I am
not aware of?

Ok, it is OT for this list and shame on me for my ignorance, but what
is the difference console vs. GUI with respect to security? 

(clearly, I work with a windows system, although most often use a
gnome-terminal from therein)

There are services [like desktop daemons] which may have files open. 
And editing open files, especially if they are opened mmap, will make a
mess.
Why not do a backup/restore?  If you open Evolution with an empty
config, like the first time on a new machine, it prompts if you want to
restore a backup file.

Could be some weird SELINUX thing;  have you tried relabeling?

Can you perform GPG operations from the command line?  Just try signing
-and-verifying a file and encrypting-and-decrypting a file.

A GUI is a much more complex piece of software that in turn controls
other complex pieces of software, many of which are doing things behind
your back. It's not that a console session can never go wrong, but you
are usually much more in control of it. Even when you need to run a
graphical program with root permissions, it's preferable to do it
manually from a console so the rest of the environment has only normal
user rights.

And of course NEVER run a web browser as root. I would hope that goes
without saying.
