Does anyone know of a good paper/site showing step by step setting up exchange 
2007 in a cluster?

broke the cluster  renamed cluster still won't come online
any suggestions?

Can you give us some more details?

Is it Exchange 2000 or Exchange 5.5 ?  Which Service Pack is installed?
Which hotfixes are installed?

When you say won't come online..  Which services are not coming online?
SA, others?

When you say broke the cluster, do you mean you evict a node?  Do you
mean you deinstalled the cluster service?  On both nodes?
