The sitefolderserver will be moved (or changed in AD) to your Ex2007 server
once you remove the public folder database from the last ex2003 database;
you'll be pompted when you go to delete the pf db.  At that time you will
need to restart the SA on the Ex2007 public folder server for the change to
take affect.  As for the offlineoabserver, I believe so, but I'm not 100%
sure.  I can check on this a bit later and confirm...unless someone jumps in
before me.

An OAB has a specific generation server tied to it. You shouldn't be able to 
remove the Exchange 2003 server if you haven't rehomed any OABs hosted on that 
server. If you removed the server manually, you can move-offlineaddressbook 
from the Exchange Management Shell (and probably from the Exchange Management 
Console as well).

Once you mount the PF store, edit the properties of the OAB to include PF 
publishing, and then update-offlineaddressbook from the Exchange Management 
Shell (or the Exchange Management Console, whichever you are most familiar 
with).

That's all it should take. No biggie.

If you are using Outlook 2003 or above, you shouldn't need siteFolderServer; 
but as Alex said in another posting, it should be rehomed when you remove the 
server that hosts it, to any server in the AG that hosts a PF store.
