DNS can take time to propagate, so your new MX record may take some time to
be "known".  I use a few DNS sites as well as query my ISP DNS servers.

Haven't gotten there yet.  Still migrating and testing the setup of the user
account.

will be brought in house) and I don't ever see it leave or enter the smtp
queue on Exchange or Ironport.

So I am at a loss for why I am not seeing it.

Is it because in step 2 I am giving the external pop/smtp addresses??

Have you tried telnet to port 25 on the Ironport, or using a PS script to send 
an email using the Ironport as a smarthost?
