According Microsoft it is not supported.

Domain rename is also not supported in a forest in which Exchange Server 2007 
or Exchange Server 2010 is deployed.

Sounds like pull the trigger and see if it breaks. :@

Uhhh, what part of it doesn't work did you miss there...  It only works
and is only supported under Windows 2003/Exchange 2003.  No more, no less...
