I am pretty sure that outlook replaces the exchange mapi with a version of it's own. You might try to reservice pack and see if that brings the correct version back into play.

I have looked through the Knowledge base, and have checked all of the areas that they suggest, but I am still not able to start the service. I am here all night until I can get this up so I would appreciate any help.

I have seen this at a client of mine. If the SP does not fix the problem, remove the connector and reintall it.
