I'm not exactly sure what you mean that Linux cannot write to /mnt/windows.
I do that all the time. When I was running NT and Libranet I compiled the
kernel to read and write to NTFS. This is not recommended since NTFS gets
really picky about what system writes to it, but nothing died, so I say,
"Screw NTFS and what it likes writing to it."
