I did not realize, that I have installed new fonts with OO.o 3.0.0 :) So I now start including these fonts into the catalog of the formula editor. http://dejavu.svn.sourceforge.net/viewvc/dejavu/trunk/dejavu-fonts/unicover.txt gives a summery, which symbol is in which font. So if the symbol font(s) of OO.o will contain more symbols that can then be reached by simply typing a shortcut into the formula editor (like "\mapsto") or by clicking a button in the catalogue, that would solve that issue. - Please do not reply to this automatically generated notification from Issue Tracker.
