Gestaltung for design sounds right. The problem with Editing is that there are two elements covered by the same English word, whereas German (and my own language Danish) have more specific terms for these two elements, the preparation of the text and the business side of bringing the product to the consumer. Herausgeben would be more about the business element. Redaktion or Bearbeitung would be more about the preparation (and selection) element. If the edition (company) is otherwise indicated, I would tend to use Redaktion for the function of Lucas Fels, if he mainly has supervised the creative elements of the edition. Yes, Herausgegeben von is Edited by. I don't think I've ever seen the engraver credited on a score, but I think Gestaltung is OK. Or you could just say Design, which is also used in German.
