For such things (not that I do them all that often) I simply use two 
hands on the midi keyboard to hit all the notes I want in the chord.

I use the same method David illustrated: you can press shift-lock plus value 
number on the keyboard, this will let you enter a complex chord of the desired 
value using both hands.
