Hiro,

You do not have to create a default document. We still ship one. You can
turn the Wizard (As well as the Launch Window in 2k5) off in Program
Options--New

Dear Jonathan,

In your Finale folder there is something called Maestro Font Default (or Jazz Font Default).  This is a control document which defines a bunch of parameters Finale uses to define things in various other documents you might produce.  Getting your default document the way you like it goes a long way to reducing the amount of work you have to do later.

I believe this page setup definition attached to the default file is changed behavior since Finale 2004 and OS X.

Is this the file that you are extracting from at the time? Because I have tried changing the page setups in hundreds of scores to what I want in the extracted parts (e.g. 'My printer' with an A4 page size) and this doesn't come out in the extracted parts UNLESS I get them to open up on auto open parts from the extract dialogue.

I have many collegues who confirm this action. (Remember this is a mac OSX thing and never occured in OS9, wishful thinking!).

Dear Jonathan,

I believe, as some others have pointed out, that the page setups will
revert to whatever you have defined in your default document.  If you
have Any printer, and US Letter defined there, that's what you'll
get.  Change the default document, and the results will change.
