Now way around 64-bit for both, OS and Firebird. In respect to CPU, they 
all are great and probably sufficient, depending on what you are doing, 
but more important for a database server is plenty of RAM and fast 
disks, ideally in a RAID 10 with a decent RAID controller.

It all depends on what load you expect.

I use intel core i7 and centos 6 64bit
Harddisk raid level 0, SATA wetern digital raptor

performance : excellent.
