Do any of you know if it is possible to include an Excel file as an
attachement to a PDF, and place a link in the PDF to open that Excel file? I
mean without creating a PDF of the Excel file. Thanks,

You can:
Attach the file directly (this won't have a link to click on, but the
Attachments panel should open up with the PDF)
Attach the file as a comment
Combine files in PDF Portfolio

You should be able to do it using Acrobat's Portfolio. File  Combine 
Asssemble PDF Portfolio.
