A little late to the party...
...However, a couple of my works may be interesting to the Caryn and the
list.

Both of these are video works, but they are single-channel and designed for
cinema presentation, so they'd fit with a film screening scenario.

*Scalene*, 2008
This work uses a text of Aristotle's excerpted from his (fragmentarily
extant) "Protrepticus".  The work stars Michael Snow, who reads the
Aristotle text in the original Greek.

*Screen Scene*, 2011
The piece incorporates two separate Plato excerpts dealing with a theory of
vision.  The actual text is appears in the context of the work.

Hi Caryn I have a short film at Canyon Cinema entitled Delaware Park in
Buffalo made circa 1968. I shot it while tripping on lsd and is a travel
through the Park ending up at the Albright Knox Museum. The sound track has
Ed Sander's singing "A Hymn to Sappho"  in Ancient Greek from the Fugs LP
entitled "It Crawled into My Hands, Honest".

I know it is on the "edge" of what you are looking for, however, it may
just work.

One obvious suggestion is Brakhage's /Visions in Meditation #3: Plato's 
Cave/.


Another is Hollis Frampton's /Works and Days/, a found film that he 
signed as his own and titled after a Hesiod poem.


There are also several relevant feature=-length films by Straub/Huillet

I sincerely hope your students will be required to read some of the 
great Greek texts seriously, and not just as an adjunct to media production.
