Original recipe yield: 8 servings


INGREDIENTS
6 tart apples - peeled, cored, and sliced 
1/2 cup butter, melted 
1 cup all-purpose flour 
1 cup white sugar 
1 cup quick-cooking oats 
2 tablespoons ground cinnamon, divided 
1/4 cup butter, cut into pieces 
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). 
Place apples in a 9x13 inch baking dish. In a bowl, mix melted butter, flour, 
sugar, oats, and 1 tablespoon cinnamon to form a crumbly mixture. Sprinkle over 
apples. Dot with remaining 1/4 cup butter, and sprinkle with remaining 1 
tablespoon cinnamon. 
Bake 50 minutes in the preheated oven, until lightly browned and apples are 
tender.

Americans’ love affair with Italian flavors started with warm, homey dishes 
like this one. There are chicken and eggplant variations, too.

Prep Time:15 min 
Start to Finish:50 min 
Makes:6 servings 


1egg
2tablespoons water
2/3cup Progresso® dry bread crumbs (any flavor)
1/3cup grated Parmesan cheese
1 1/2pounds veal for scallopini
1/4cup olive or vegetable oil
2cups tomato pasta sauce (any variety)
2cups shredded mozzarella cheese (8 ounces)


Heat oven to 350°F. 

Mix egg and water. Mix bread crumbs and Parmesan cheese. Dip veal into egg 
mixture, then coat with bread crumb mixture.

Heat oil in 12-inch skillet over medium heat. Cook half of the veal at a time 
in oil about 5 minutes, turning once, until light brown; drain. Repeat with 
remaining veal, adding 1 or 2 tablespoons oil if necessary.

Place half of the veal in ungreased rectangular baking dish, 11x7x1 1/2 inches, 
overlapping slices slightly. Spoon half of the pasta sauce over veal. Sprinkle 
with 1 cup of the mozzarella cheese. Repeat with remaining veal, sauce and 
cheese.

Bake uncovered about 25 minutes or until sauce is bubbly and cheese is light 
brown.

1box Betty Crocker® SuperMoist® white cake mix
Water, vegetable oil and egg whites called for on cake mix box
1box (4-serving size) raspberry-flavored gelatin
1cup boiling water
1/2cup cold water
1container (8 oz) frozen whipped topping, thawed (3 cups)
Fresh raspberries, if desired


1.Heat oven to 350°F (325°F for dark or nonstick pan).
2.Make and cool cake as directed on box for 13x9-inch pan.
3.Pierce cooled cake all over with fork. In small bowl, stir gelatin and 
boiling water until smooth; stir in cold water. Pour over cake. Run knife 
around sides of pan to loosen cake. Refrigerate 2 hours. Frost with whipped 
topping; garnish with raspberries. Store covered in refrigerator.

High Altitude (3500-6500 ft): Follow High Altitude directions on cake mix box.

1 pkg.  (4-serving size) JELL-O Brand Peach Flavor Sugar Free Low Calorie 
Gelatin 
6 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream, divided 
1 pkg.  (4-serving size) JELL-O Brand Raspberry Flavor Sugar Free Low Calorie 
Gelatin 

STIR 1-1/4 cups of the boiling water into the peach flavor gelatin in medium 
bowl at least 2 minutes until gelatin is completely dissolved. Pour 3/4 cup of 
the gelatin into a 1-quart clear glass serving bowl. Refrigerate 15 minutes or 
until set but not firm (gelatin should stick to your finger when touched). 
REFRIGERATE remaining dissolved gelatin about 5 minutes or until slightly 
thickened (consistency of unbeaten egg whites). Gradually add 3 Tbsp. of the 
sour cream, stirring until well blended. Spoon over gelatin layer in serving 
bowl. Refrigerate 15 minutes or until gelatin is set but not firm (gelatin 
should stick to your finger when touched). 
REPEAT with raspberry gelatin, cooling dissolved gelatin completely before 
pouring over gelatin layers in serving bowl. Refrigerate 2 hours or until firm.

Yield: 4 servings 

4 medium-sized russet or other baking potatoes, well scrubbed 
12 ounces bacon, chopped 
8 ounces sliced button mushrooms 
1/4 cup brandy 
1 tablespoon green peppercorns, drenched in cold water 
1 cup cream 
Salt and pepper 
Butter, for topping 

Potato: Preheat the oven to 375 degrees F. Prick potatoes with a fork and bake 
until soft, about 1 hour. 

Sauce: Saute bacon, add button mushrooms and cook until golden brown. Pour 
brandy first into a measuring cup (for safety) and then into the pan and 
carefully ignite with a long match. After the alcohol burns off and the flame 
has died, stir in the peppercorns. Stir in the cream and heat through, without 
boiling. Salt and pepper, to taste. Cut open baked potatoes. Top each with a 
spoonful of butter, then cover generously with sauce.

Yield: 4 to 6 servings 

2 small cloves garlic 
Olive oil, for sauteing 
1 medium zucchini 
1/2 bunch basil 
8 eggs 
2 tablespoons milk 
Salt and pepper 
1/4 cup grated Parmesan 

Preheat the broiler. Start by crushing some garlic and heating it in some olive 
oil in a medium nonstick saute pan on the stove. While that is heating up, very 
thinly slice the zucchini on a mandoline. When the oil and garlic are heated, 
tear some basil into the pan and add all the sliced zucchini. Cook until the 
zucchini is tender, but not cooked through, about 2 minutes. Season with salt 
and pepper. Blend eggs in a blender with a little bit of milk and some salt and 
pepper. Blend on the highest speed. Pour the egg mixture into saute pan and let 
it sit for 1 minute. When there isn't much loose egg left in the pan, grate 
some Parmesan on top and place pan in the broiler for 1 minute. Take pan out of 
broiler, let it cool and set in pan for 5 minutes. When cool invert a plate on 
top of pan and turn over. Slice and serve.

1/2 cup KRAFT 100% Grated Parmesan Cheese 
1/2 cup  finely crushed POST TOASTIES Corn Flakes 
1/4 tsp. ground red pepper (cayenne) 
6   flounder fillets (1-1/2 lb.) 
1 egg, lightly beaten 

PREHEAT oven to 450°F . Mix cheese, corn flake crumbs and pepper in shallow 
dish. Dip fish in egg, then in cheese mixture, turning to evenly coat both 
sides of each fish fillet. 
PLACE in greased shallow baking dish. 
BAKE 5 to 10 min. or until fish flakes easily with fork.

1can (16.3 oz) Pillsbury® Grands!® Homestyle refrigerated buttermilk biscuits

1/2cup Old El Paso® Thick 'n Chunky salsa

1 1/2cups cubed cooked chicken

1 1/2cups shredded Cheddar cheese (6 oz)

1/2cup chopped green bell pepper
1/4cup sliced ripe olives, drained, if desired




DIRECTIONS 
CUT each biscuit into 8 pieces; toss with salsa to coat.
SPREAD in sprayed 8-inch square (2-quart) glass baking dish; sprinkle with 
remaining ingredients.
BAKE at 375°F 35 to 40 minutes or until edges are deep golden brown and center 
biscuit pieces are no longer doughy. Let stand 15 minutes. Serve with 
additional salsa, if desired.

Ingredients:


1 can (10 3/4 oz.) Campbell's® Condensed Cream of Celery Soup 
1 jar (7 oz.) roasted red pepper, drained
1 soup can milk 
Freshly ground black pepper 


Directions:


POUR soup into saucepan. Place roasted peppers and milk in blender jar. Blend 
until smooth.
ADD roasted pepper mixture to soup in saucepan. Heat through. Season with black 
pepper.
TIP: You can also make this soup with Campbell's® Cream of Mushroom or Cream of

14 squares HONEY MAID Low Fat Honey Grahams, finely crushed (about 1 cup)

3/4 cup sugar, divided 

3 Tbsp. margarine or butter, melted

1 envelope KNOX Unflavored Gelatin 

1 cup fat free milk 

2 pkg. (8 oz. each) PHILADELPHIA Fat Free Cream Cheese, softened

1 tsp. vanilla 

1 tsp. grated lemon peel

MIX crumbs, 1/4 cup of the sugar and margarine in small bowl. Press on bottom 
and side of 9-inch pie plate. Bake at 350°F for 5 minutes; cool. 

SPRINKLE gelatin over milk in small saucepan; let stand 1 minute. Stir on low 
heat until gelatin is completely dissolved, about 3 minutes. Cool slightly. 

BLEND cream cheese and remaining 1/2 cup sugar in large bowl with electric 
mixer on medium speed until smooth. Add vanilla and lemon peel. Gradually blend 
in gelatin mixture on low speed until well blended. Pour into prepared crust. 
Refrigerate 2 to 3 hours or until firm. Garnish with strawberry slices before 
serving, if desired. 

Makes 8 servings

French Onion, Cheese and Bacon Quiche

1 frozen pastry-style pie crust, OR your favorite pie crust recipe 
6 slices bacon, cut into 1 inch pieces 
1 small onion, chopped 
3 eggs 
1/2 cup milk 
1/2 cup heavy cream 
1 cup shredded Swiss or Gruyere cheese 
Salt and freshly ground black pepper to taste 
A grating of fresh nutmeg 

Line a quiche or pie pan with the pastry. Cook the bacon until crisp. Drain and 
place in the bottom of the uncooked pie shell. Saute the onion in bacon fat 
until lightly browned. Drain and add to the pie shell. In a small bowl combine 
the remaining ingredients and stir to combine thoroughly. 

Pour into the pastry shell, and bake in a preheated 375F (190C) oven for 25 to 
30 minutes, until the point of a knife inserted in the center comes out clean. 
Serve hot, warm, or at room temperature.

D' Best Chicken N' Dumplings

This is the best recipe for OLD TIME TASTE, DOWN HOME COOKING chicken and 
dumplings. For some of us that like getting our hands dirty when cooking, you 
will love this recipe. Old fashioned, hands on experience. This recipe won a 
blue ribbon and 500 dollars in a cooking contest. I hope you enjoy it.

PREP TIME 25 Min 
COOK TIME 2 Hrs 
READY IN 4 Hrs 25 Min 

SERVINGS  SCALING
Original recipe yield: 6 servings


INGREDIENTS
3 cups all-purpose flour 
1/4 teaspoon baking soda 
1/4 teaspoon salt 
2 tablespoons shortening 
1 cup ice water 
  
1 (4 pound) whole chicken, cut into 8 pieces 
1 tablespoon seasoning salt, or to taste 
3 1/2 quarts water 
1/2 small onion, chopped 
2 stalks celery, chopped 
1/4 cup margarine 
salt and pepper to taste 
1 teaspoon poultry seasoning
DIRECTIONS
In a large bowl, sift flour, baking soda and salt. Cut in shortening until 
mixture resembles coarse crumbs. Stir in water until mixture forms a ball. 
Divide dough in half and shape into balls. Wrap in plastic and refrigerate for 
2 hours or overnight. 
Remove the skin from the breast, thigh and back of the chicken, but leave it on 
the legs and wings. Season chicken with seasoning salt, and place in a large 
stock pot. Pour in water. Add onion, celery and margarine. Bring to a boil, 
then reduce heat to simmer. Cook for about 1 1/2 hours, until chicken falls off 
the bone. 
On a lightly floured surface, roll one ball of dough to about 1/8 inch thick. 
Cut into 2 inch squares. Drop into simmering broth, and let cook for about 2 
minutes. Stir gently to prevent sticking; add more water if needed. Season 
broth while dumplings are cooking with salt, pepper and poultry seasoning. 
Simmer for about 15 minutes, or until dumplings are cooked through. 
Note
This recipe calls for only 1 ball of dough, but for those that like a lot of 
dumplings, use both balls. This dough can also be used for cobblers. Freeze the 
other half of the dough if you don't use it.

6 large apples, washed, well-dried 
6 wooden popsicle sticks 
1 1/2 (14 ounce) packages caramels (about 75), unwrapped 
3 tablespoons water 
24 chocolate sandwich cookies, such as Oreos, coarsely chopped*
6 (1 ounce) squares white baking chocolate 
2 teaspoons vegetable oil 
Food coloring in color desired *
6 pieces stick-shaped hard candy, optional

* For Easter, use Oreos that have the purple filling. Tint the white chocolate 
any color to match the holiday. I prefer using the paste food colors rather 
than the liquid food colors.

Remove stems from apples. Insert a Popsicle stick into stem end of each apple; 
set aside. Place caramels and water in large saucepan. Cook over medium-low 
heat until caramels are melted, stirring frequently. Dip apples into melted 
caramel, spooning caramel over apples to coat. Roll in chopped cookies, 
pressing cookies gently into caramel. Place on wax paper-lined cookie sheet; 
let stand 25 minutes or until caramel is set. Place white chocolate and oil in 
medium saucepan; cook over low heat until melted, stirring frequently. Remove 
from heat. Stir in food coloring. Let cool 15 minutes. Drizzle over apples; let 
stand until firm. Store in refrigerator up to 2 days. Replace Popsicle sticks 
with sticks of hard candy just before serving.

This is another wonderful recipe from the Pacific coast.

2 tablespoons dried rosemary
2 teaspoons dried thyme
1/2 teaspoon fennel seed
1 teaspoon black pepper
5 cloves garlic, peeled and chopped
1 teaspoon celery seed
1 teaspoon crushed red pepper flakes
2 quarts low-sodium chicken broth
8 ounces clam juice
3 ounces tomato paste
1/2 cup (1 stick) butter
1 cup white wine
1 1/2 pounds raw peeled shrimp, with tails
French bread (for dipping)

Partially break up the rosemary, thyme, and fennel seed with fingers or mortar 
and pestle. Place all ingredients, except wine and shrimp, in a large pot. 
Simmer for about 30 minutes, then add wine. Continue to simmer for a total 
cooking time of no more than 2 hours. Just before serving, add raw shrimp. 
Simmer until shrimp is done, stirring, about 2 minutes. Each bowl should 
contain a serving of shrimp and a lot of broth, which should almost completely 
cover the shrimp. The dish is eaten with your fingers. Soak up the broth with 
the bread.
Yields 4 servings.

Free Recipes Vegetable Lasagna Casserole

Vegetable Lasagna Casserole 

From Food Network Kitchens

Difficulty: Medium 
Prep Time: 25 minutes 
Cook Time: 1 hour 
Yield: 6 servings 

2 small zucchini 
2 small summer squash 
Kosher salt 
2 red bell peppers 
7 ounces low-fat goat cheese 
1/3 cup pitted Calamata olives 
2 teaspoons chopped fresh thyme leaves 
1/4 teaspoon red pepper flakes 
1 recipe tomato sauce (recipe follows) 
Freshly ground black pepper 
1/4 cup grated Parmesan

Slice zucchini and yellow squash lengthwise into 1/8 to 1/4-inch thick strips. 
Lay the strips out on baking sheet pan and salt generously. Set aside. Roast 
the peppers over a gas flame or broil on a sheet pan until completely charred, 
about 8 minutes. Put the peppers in a bowl, cover, and set aside until just 
cool enough to handle, about 5 minutes. Rub the skins off the peppers with your 
fingers to remove most of the charred skin. Core and remove the seeds, then 
slice the peppers lengthwise into 1 1/2-inch strips. Preheat the oven to 375 
degrees F. Mix the goat cheese, olives, thyme, and red pepper flakes together 
in a bowl and season, to taste, with salt and pepper. Thoroughly wipe excess 
salt and moisture from zucchini and squash with paper towel. Spread 1 cup of 
the tomato sauce into the bottom of an 8- by 11-inch baking dish. Begin 
layering, remembering to season with pepper between each layer. Start with the 
zucchini and then summer squash and all
 the peppers. Dollop spoonfuls of the cheese over the peppers and then spread 
it out to cover. Spoon half of the remaining sauce over the vegetables. Repeat 
with the remaining zucchini, squash, goat cheese, and sauce. Sprinkle top layer 
with Parmesan and bake, covered, for 30 minutes, then uncover. Continue baking 
until the vegetables are tender and the sauce thickens, about 30 minutes more. 
Let lasagna stand for 10 minutes before slicing.

Tomato Sauce with Basil: 
1 (28-ounce) can chopped tomatoes 
2 tablespoons extra-virgin olive oil 
3 large cloves garlic, smashed 
1 tablespoon red wine vinegar 
1 teaspoon kosher salt 
1/3 cup packed basil leaves 
Freshly ground black pepper 

Put the tomatoes, olive oil, garlic, vinegar, and salt in a sauce pan. Bring to 
a boil over high heat, lower heat to a brisk simmer, and cook until thickened, 
about 30 minutes. While sauce cooks tear basil leaves into small pieces. Remove 
the sauce from the heat and stir in the basil. Transfer half of the sauce to a 
food processor and puree. Return to the saucepan and season, to taste, with 
salt and pepper.

Salsa Omelet Pie

We love breakfast foods for supper during the winter, so when DH saw this 
recipe in our local co-op magazine, he was quick to point it out to me. Check 
it out and see what you think!!!

40 min 10 min prep 
4 servings 

1/2 cup salsa (we like the medium heat, but that is to your taste) 
1 cup shredded sharp cheddar cheese 
1 cup monterey jack cheese 
1 cup sour cream 
6 eggs


Preheat oven to 375 degrees F. 
Spray a 9 deep dish pie plate, or a 10 pie plate with non-stick spray. 
Pour salsa into the prepared pie plate. 
Blend cheeses and layer over the salsa. 
Blend the eggs and sour cream until smooth and pour over the cheese. 
Bake 20-25 minutes or until a knife inseted in the center comes out clean. 
Let stand for 5 minutes before cutting.

Chill: 30 minutes

Serves: 4


Ingredients:


3 cups cooked corkscrew-shaped pasta (about 2 cups dry)
2 cans (5 ounces each) Swanson® Premium Chunk Chicken Breast in Water, drained
1 large zucchini, cut in half lengthwise and sliced (about 1 1/2 cups)
1 cup sliced mushroom 
1 cup cherry tomato, cut in quarters
3/4 cup creamy fat free Italian herb dressing 


Directions:


In large bowl mix pasta, chicken, zucchini, mushrooms, tomatoes and dressing 
until evenly coated. Refrigerate 30 min.

Free Recipes Thai Chicken Sandwich

Thai Chicken Sandwich

3/4 cup soy sauce 
4 ounces lime juice 
1 cup vegetable oil 
1 cup chili garlic sauce 
3 ounces catsup 
Two 6-ounce chicken breasts 
Salt and pepper 
2 Tbsp mayonnaise 
1 Tbsp Thai chili sauce 
2 hamburger buns 
Lettuce and tomato

Mix soy sauce, lime juice, vegetable oil, chili garlic sauce and catsup. Add 
chicken breasts to mixture and refrigerate for at least 6 hours.

Remove chicken from refrigerator; season with salt and pepper. Place on a hot 
grill or bake in a 400° F. oven until cooked completely through. (A meat 
thermometer should read at least 155 to 160° F.)

Mix the mayonnaise and Thai chili sauce together. Brush 1 tablespoon of the 
mayonnaise-Thai chili sauce mixture over each bun. Place chicken on the bun and 
serve with lettuce and tomato.

Serves 2

1/2 of a 12-oz. loaf ciabatta bread, cut into thirds 
3   KRAFT 2% Milk Mozzarella Singles 
2 large tomatoes, cut into thin slices 

PREHEAT oven to 400°F. Split each bread piece horizontally in half; fill evenly 
with 2% Milk Singles and tomatoes. 
PLACE on baking sheet; cover with foil. 
BAKE 10 min. or until 2% Milk Singles are melted and sandwiches are heated 
through.
