Bolitos (Sweet Christmas Tamales)
For a Mexican-style celebration 

Ingredients
2 pounds of hojas (corn husks)
2 pounds of masa
1/2 cup of solid vegetable shortening
1 cup of granulated sugar
1/4 cup of warm water – as needed
2 tablespoons of cinnamon
1 cup of dry raisins
4 teaspoons of aniseed

Directions
1) Soak the corn husks in hot water for 20 or 30 minutes until they become 
pliable. 

2) Stand the corn husks in a pan to let allow them to drain.

3) Mix the masa with shortening, and then add sugar.

4) Next, you should be kneading and adding a little warm water at a time to 
create a dough with a smooth consistency. 

5) Add the cinnamon, raisins and aniseed, making sure to blend it into the 
dough. 

6) Lay softened husks onto a large table.

7) Place four tablespoons of mixture on the bottom half of each husk. 

8) Fold the treats like you would for any typical tamale. 

9) Prop assembled tamales in a small roaster pan that has been filled with 
water to the halfway mark. 

10) Cover with a lid and bring water to a boil.

11) Cook over medium heat for one hour. Keep in mind that the masa will 
separate from the husks when cooked.
