When you double-click on a music file, you want not iTunes to open and play it, 
but QuickTime?
If this is what you want to do, that's easy:
-In the Finder, do Get Info on a file of the concerned type.
-There is a section Open with... in there, where you can select the 
application you want to open it with.
-Activate the checkbox Do this with all files of this type before clicking OK.

(I'm not at my Mac right now, so it might be slightly different...)

An alternative way is to drag the file's icon onto QuickTime's icon (e.g. in 
the dock) to open it.

You didn't write what kind of music file you want to play, or what happens when 
you try to open iTunes by itself, what messages come up for example. All that 
is very useful for troubleshooting! Anyway, let us know how it goes.

iTunes version 10.6.3 was the LAST  FINAL version of iTunes that runs on a PPC 
Mac under 10.5.8.

Toss your iTunes into the trash, download a new copy of 10.6.3 here:

If this won’t open, you’ll need to probably reinstall your OS.

Start by doing a Safe Boot to rebuild the cache files, then reboot again 
normally. Try iTunes. If it still won’t open, reinstall the 10.5.8 Combo Update 
(first run Disk UtilityVerify Disk (repair if verify fails) and Repair 
Permissions). If after reinstalling the 10.5.8 Combo Update you STILL can’t 
open the new iTunes 10.6.3 you’ll have to do a complete OS reinstallation from 
your install disc.

DA G4 will not shut down

PowerMac G5 Dual 2.5 Boot Issue

So, if the machine is restarted or shutdown, it will not boot for 5-6 tries.
When it boots, it is fine. The PRAM battery is definitely bad. The LCS did
leak, but has been repaired. It idles at 63c, so I am thinking that is is
possible that the previous owner who repaired the LCS may of used bad TIM.
