For this, my mailing lists account, I use Thunderbird and/or Eudora OSE.
You can configure the reply text at Preferences -> Advanced -> General
-> Config Editor... "mailnews.reply_header_authorwrote.
In this setting, "%" inserts the author's name so you probably don't
want to delete it.
I've done the same thing for my personal account in Mail.app:
/System/Library/Frameworks/Message.framework/Versions/B/Resources/English.lproj/Delayed.strings
Put whatever you want between "%3$@" and "\n\n"
These instructions are for Mail.app v4 a la 10.6 Snow Leopard. The file
may be in a different location in previous versions.
I believe that GyazMail will let you do the same thing somewhere in it's
Preferences settings.
I suggest you back up the files that you will be changing first in case
something goes kerflooey.
