2.Can we connect a WebService rather than like direct sqL connection?
Do you have any well know web service in mind ? GeoServer is for example
capable of connecting to a WMS or WFS.
If you are targeting a custom web service then you will have to implement a
specific data store for it (is quite easy to do).
3.Can we connect multiple different data stores / Services?
Yes you can have multiple data stores in GeoServer:
