In addition in grub there is a timeout field that you can set. In
original grub you could edit /boot/grub/grub.conf. In grub2 it is in
/etc/default/grub.
GRUB_TIMEOUT=5

You then need to run grub-mkconfig to rewrite /boot/grub2/grub.cfg.

I believe that if you hold down the Shift key at strategic
points during GRUB2 startup it will present the interactive
menu that allows you to edit the boot commandline instead
of just hurling itself off into the void...
