Give a gift basket of homemade goodies, such as pickle bottles with pretty holiday ribbons, small fruit cakes or spice cakes wrapped in colored cellophane. This year, I am giving all my friends recipe baskets - choose one of their favorite recipe, write out the recipe on some Christmas paper and laminate it, include spices for this particular recipe, wrap the ground or whole spices in individual small plastic labeled bags and tie them with tiny colored ribbons. Are there some side pickles or relishes that would go well with this recipe? Include small bottles of store bought or homemade side dishes, to complete your basket, put some holiday tissue all around the basket or cover your entire basket with clear cellophane and end with a pretty bow. Make it special, make it personal and remember, have fun doing it! When you present the gift to that someone special, they’ll appreciate it even more because you made it yourself. This is a recipe for a delicious date nut fruit cake that can make a very nice gift DATE NUT FRUIT CAKE 4 eggs, 2 cups flour, 1 1/2 cup broken walnuts, 1 1/2 cups broken almonds, 1 1/2 cups broken hazelnuts, 1 1/2 cups candied cherries (halved), 1 1/2 cups candied pumpkin, 2 cups dates, 1 cup sugar, 1/2 cup rum, 2 tablespoons vanilla essence, 2 tablespoons baking powder, 1/2 tablespoon salt Soak the fruits and nuts in rum overnight. Beat together eggs, gradually adding sugar & vanilla. Mix thoroughly. Add flour, baking powder, salt, nuts & fruits one spoon at time & mixing well. Line 2 cake tins with wax paper. Divide mixture between pans. You might want to save some of the nuts to sprinkle on the top. To do this - first bake them for 5-7 minutes and then sprinkle them on top. This prevents them from sinking into the cake.
