Could it be that Goan women have overtaken men in education and have moved into 
middle management jobs?  
So instead of being a waitress, they are now supervising the waiters - in a 
restaurant or in a hotel.

Please note that there were waitresses in the late 1880s at The Pub in 
Mapusa run by Sylvester. Also at the Divar-Narvean Ferry there is a small 
chai-bhaji shop where the owner oversees the kitchen while his wife serves 
and does the billing. My friend also tells me that there is a waitress at 
Viva Panjim restaurant in Fontainhas.


With the closure of dance bars in Mumbai perhaps we will see more of these 
waitresses migrating to Goa. As always happens here the 'outsiders' will 
take on the work we locals are not willing to do.
