Dear Listers,

Goan cooks and house-keepers/governesses have become a rear breed here in 
Karachi too. The local newspaper of the of the archdiocese of Karachi, 'The 
Christian Voice' often has ads for them by wealthy Muslims.

Also Goan school teachers are also sought after but most have left the 
profession for more lucrative fields or left the country for good.

Hi,

Cooks, butlers, dorji, Kharvi, and what not are the descriptions associated 
with Goans, and when one looks at all this now, these are the professions, 
one can earn more money from. Once upon a time they may have been degrading, 
and hence the fathers did them did not want their children to carry on with 
those professions.

See the cooks, a profession in demand and if one had studied it real good, 
would be chef a position one would be proud of.

British butlers are in demand in the houses of wealthy, Why?

Kharvi, the fisher folks of Goa are playing with money and also in good 
health. Due to their hard work And what about Dorji? The world moved ahead 
with positions as designers but here we are discussing what Nehru said. If 
only we had stuck to those labels which Nehru as some say had given the 
Goans of then, and moved ahead, Goa would have been noticed not as a Tourist 
place but a place with best designers, best chefs, best Butlers. But who 
knew all this would happen.

This issue has seen it being twisted and turned. RKN
has gone to provide the ajeeb quote. But I think the
ajeeb quote is a Hindi translation of what Nehru is
said to have said that Goa and Goans are unique and
that Goa's cultural heritage should be maintained.
Coming to Goans being noted as cooks and butlers, this
fact cannot be hidden just as the fact that Portugal
contributed a lot to Goa's uniquessness which
attracted Nehru.
In those days, Goans served as cooks and butlers in
the palaces of Maharajs and Nawabs. Also many Goans
were court musicians.
The fact that Goans dominated the cruise line services
also reinforces Goans expertise in the fields of
culnary arts and waitering.
I think some of the powerful Indians and Europearns in
British India and also after Independence employed
Goan ayahs. The tradition had continued well into the
late 60s and early 70s when the decline in the supply
of Goan maids began.
Goan maids also made a beeline to the Gulf and we are
aware or at least heard lot of tales of Goan maids
being exploited or letting themselves be exploited for
financial gain.
Some of these areas where Goans were well-known may be
now looked down upon, but anyway these areas defined
the Goan catholics. We cannot hide that.

Exactly WHERE can I find a good Goan cook...I have
been looking for one in Europe but cannot get one even
after trying for over two years. Cooks and Butlers are
in great demand not only in Europe but also in North
America. And, needless to say, are very well paid.

I don't think you can find Goan cooks and butlers in Goa either!
They're getting extinct here. And I don't blame anyone for that.
First, people like myself (who are often eating meals at veg-only
outlets like Sarovar, ask Cecil Pinto!). Then those who have a
condescending attitude towards this section of society who helped
build a unique USP for Goa! IIf only we would have greater belief in
the dignity of labour. In what way is an IITian who takes a
highly-subsidised world class education to the West, after paying
peanuts for it, any way suprior to someone who slogs the hard way,
teaches himself a profession (often despite all the odds), and then
contributes honestly and ungrudgingly to the upkeep of his family and
building the reputation of Goans in the cullinary arts? FN

Nehru may have called Goans cooks and butlers but
after the invasion he sent his troupe of clowns to get
things in place for the bounty collection. 

From the story that I heard his clown troupe made it
to Hotel Mandovi where they ordered the placement of
forks on the right side and the knife on the left of
the plate. Has any body heard of this story,
especially from Tivolem? Also do the bhayyas eat with
forks and knives in UP?
