You'll want to animate using setTimeout setInterval:

https://developer.mozilla.org/en/window.setInterval
... you can calculate a point between two LatLngs using the
google.maps.geometry.spherical.interpolate function:
http://code.google.com/apis/maps/documentation/javascript/reference.html#spherical
Then you can draw a PolyLine using the start LatLng, and the interploated
LatLng. Make sure you set geodesic: true in the options:
