Would rather have a machine already set up and working.

Hmm.. rather not. If I'm getting a new computer, I think one that is   
actually new one might last longer.

At the moment, I am using a laptop with Ubuntu. I doubt it would be
fast enough to make multiple desktops practical, but please advise
on how to make focus follow mouse, that would be useful.

From reading about this, I think Ubuntu + full KDE just about is
kubuntu.

I don't think CPU speed will impact the ability to run multiple desktops.
Memory probably would. Easy to try, though!

Focus follows mouse depends on the window manager. I'm running XFCE, and
there it's Settings, Window Manager, Focus tab, select "focus follows
mouse". I haven't used any other desktop environment for probably over a
decade, but if you're not using XFCE then a Google search will probably
help you.
