Melinda,
I love the book  The Chicken Man because it is my mother's story only 
instead of chickens she cared about the kibbutz public area gardens 
from 1933 to 1950.  No one knew better  than Mom  when to water the 
flowers and how much water each plant liked :)- Very few kibbutzim 
today are still living the socialists life. It is possible that by 
the time that the 2nd graders will be in 8th grade to idea of kibbutz 
life as described in the book will be a part of the past. It has a 
historical value as long as kids know the reason for the kibbutz 
philosophy in the past. It is no longer needed.

The Waiting Wall by Leah Braunstein Levy is the 
beautifully-illustrated story of two children's perceptions of the 
Kotel as they approach.

The Secret Tunnel by Joy Nelkin Wieder is an easy chapter book taking 
place during the time of the first Beit Hamikdash..

I'd suggest Anna Levine's Sydney Taylor Notable Book, Jodie's Hanukkah
Dig, an archaeology story about a little girl on a dig with her dad in
Modi'in. It has a Hanukkah motif but can be read any time of year.

Arlene,
I like Michelle Edwards's book Chicken Man.  The text would be too 
difficult for first- and second- graders, but this age group enjoys a 
read-aloud of the book.  Even young children can appreciate the 
values exemplified by the main character. The discussion can be 
tailored to that age group.

I'd be interested to read of others' recommendations.
