I have never (3 different places, 30+ years) heard of requiring special stains to be performed under a hood. Certainly, there are a few reagents that might need benefit from a hood (concentrated Ammonium Hydroxide) but generally, they are performed on an open counter next to a sink. If you are getting pushback, check to see if Micro is doing their gram stain under a hood?
