If nothing else works, save the project and open it in a text editor. The 
line starting with 'i' which corresponds to the upside-down image should 
have a number close to +/- 180. Add (or subtract) 180 from that, so that 
it's close to zero.

Save, open the project in Hugin, re-optimize, everything should be OK.
