 Why dont you start it all by yourself. All you need
are 
1) A linux machine
2) Internet connection
3) Some book on linux
4) Documentation for the respective software.

 Softwares such as squid, samba, iptables etc have
very good documentations. 

 Youcan always ask your queries on this list or at IRC
channels. 
 It might be difficult in the starting with very
limited or no success but you will start picking
depending on your dedication and hardwork

Get PC Quest magazine, latest edition,
they are giving PC Quest 2005 on CD and you will get installation
instruction in the magazine itself.

Or you may use these links for Red Hat installation -

and the complete install guide is available at:

Its as simple as switching to CD-ROM from BIOS
as your first boot device.
restarting the PC, with the first installation CD in.

Rest it will do on your own, 
you need to take care while setting up partition.

It costs about 90-100 bucks, and is very handy for a quick look for
useful commands,
on your CLI.
Good for begginers and sometimes even useful for experts.

 Well if u are looking for a crash course i will
recommend a book by orielly publication called "Linux
server hacks". This book covers basics of major
concepts of linux servers from memory tuning to
securit setup including firewalls, proxies and much
more. 
 Yes, dont be afraid this is not a thick book and can
be easy finished in 5-7 days with all excercises.
