Not an IMP issue, but if you're using Dovecot on the backend you could
include Sent in quota ignore:
http://wiki2.dovecot.org/Quota/Configuration

There should also be a quota warning email autogenerated (for users to
ignore - but then they can't say they didn't know).

Beside that, you can delete old sent-mail folders via login tasks.  
Just like you empty the trash folder.
