I converted it to a subtask for java 21 support
since gradle 8.5 is available i submitted a PR to update gradle which supports 
java 21 for both java and kotlin parts CALCITE-6174
after that could switch to handling of  deprecations

Hi, I noticed that the JDK 21 has been released. Considering JDK 21 is a LTS 
version, IMHO, if calcite skip JDK 20 and support JDK 21 in our future version 
will be better.

I removed 'fixVersion = 1.35.0'. It's too much to do this month.

After looking a bit more it seems like Gradle itself doesn't have full support 
of JDK 20 especially for cases when Kotlin is used
https://github.com/gradle/gradle/issues/23488 (in the issue itself there an 
estimation not earlier than July)

Another way to do it (mentioned in comments) is usage of toolchains.
