I am having this same issue. The Database stuff worked fine with 4.1.0. After
upgrading to 4.1.1, it can't find the Java installation.

I am running OSX 10.9.5

I even tried going in to preferences in AOO and manually pointing to the Apple
Java Runtime environment since it doesn't automatically show up on the
available list of runtimes.

I tried adding the JRE by pointing to this location:
System/Library/Java/JavaVirtualMachines/1.6.0.jdk/Contents/Home but AOO said
that folder didn't contain a JRE.

Do you have a /Library/Java/JavaVirtualMachines/1.6.0.jdk/Contents/Home/jre/ ?
If so, try pointing to this location.

The only folders under
System/Library/Java/JavaVirtualMachines/1.6.0.jdk/Contents/Home are: 

bin
lib
man
bundle -- this is a shortcut

To confirm that it is a bug with OpenOffice 4.1.1 I uninstalled 4.1.1 and
installed 4.1.0 - the JRE not found error is gone and database files can be
opened as before.

This version is obsolete now.
Try to update with Java 1.8 and see if the problem still continue.

I upgraded to 1.8 and reinstalled AOO 4.1.1, it didn't work right away. Had to
go to Preferences->OpenOffice->Java but 1.8 didn't show up until I clicked on
"Add". Canceled the Add, selected 1.8, restarted AOO and now it works.
