OK.  So maybe we mean something different by "gutter."  Given a two page 
layout (it'll be more but...)  i need the inside margin to be 1/4" and 
1/2" on the outside which means that for every page in the PDF, the 
margins keep swapping.  So page 1 will have 1/4" on the left, and page 2 
will have 1/4" on the right, etc.  Does that make sense?  I'm not seeing 
anything just yet that gives me that unless i can change where the table 
is drawn when it spans a page.  I'll keep playing with ColumnText, though...

MultiColumnText supports gutters for simple regular columns in PDF.  See 
com.lowagie.text.pdf.MultiColumnText.addRegularColumns()
