You can open the activity switcher, and click on the 'Configure' button for an activity. The shortcut setting is on the 'Other' tab. Now, there is some issue with the activity shortcuts in Plasma 5.7, and that one is the next item on my TODO list. As for Alt+H and related shortcuts, there is no relation between the issue with activity shortcuts, and these. It is a separate issue, and I'd say it is a setup issue. I just checked KDE4 in Debian 8 and CentOS 7 and the Alt+A is indeed impossible to change there as well. Searching for Alt+A in KDE's config files doesn't return anything except Ctrl+Alt+A which is for something different. The Alt+A seems to be hard-coded in KDE. Disappointing for Emacs users.
