This is not related to any defaults in indico, required fields are chosen 
during creation of the specific form for an event

Probably because the original developers of Indico were told that it's 
mandatory for the original use case (e.g. for visa letters for those old-
school in-person meetings we used to have in the past ;-) ).

Simply select Antarctica or some other country and get over it. And write an 
MR for Indico which makes this question optional.
