As far as I can see, all files are owned by me and RW and even if they weren't,
shouldn't there be a PolKit prompt asking me to fix permissions for me instead
of crashing? 🤔

Something weird in your setup. Can you check that all files in
~/.local/share/akonadi are owned by your user and writable?
