This is the normal behavior. I thought you meant editing by double-clicking or
F2 was causing this. Closing.

entering just numbers, the behavior is normal. If you start writing text in a
cell with numbers, the number is still visible until you enter a second
character

I open a new document and start inserting content in the upper left cell. Then
I move to the next cell and so on. I just go back and start writing. I did not
enter the editing mode with F2

So what exactly is happening in the videos: are you hitting F2 to edit a cell
with existing content?

I don't see the problem.
I also tried in Linux yesterday and no problem with editing cells.
